Cooking Thanksgiving Dinner on the Road

Spending Thanksgiving Day on the road? Sure you can pop into a rest stop offering a turkey sandwich special, but for a taste of home, you could prepare your very own Thanksgiving dinner right in the cab. Here’s how (with the help of your generator and power inverter):

Turkey

What You Need: 

  • Crock-pot/slow-cooker
  • Slow cooker liner
  • Paper towels
  • 1 3lb turkey
  • Olive oil
  • Diced onions, celery, &/or carrots
  • Seasoning (we recommend garlic powder)

Instructions:

  • Thaw turkey in mini-fridge for 24 hours, or in cold water for 90 minutes
  • Pat turkey dry with paper towels
  • Rub turkey with olive oil
  • Rub turkey with seasoning
  • Apply slow cooker liner to the cooker
  • Add diced veggies to the cooker
  • Add turkey to the cooker
  • Cook in covered cooker on low for 4-5 hours while you drive
    • Be sure the cooker & lid are secure
  • Remove turkey and cut off netting if applicable
  • Save the remaining broth & veggies in the crockpot for making your stuffing

Stuffing

What You Need:

  • Toaster oven
  • Mixing bowl
  • Oven-safe nonstick pan or serving dish
  • Bread
  • Seasoning (we recommend sage, thyme, &/or rosemary)
  • Turkey broth & veggies from the crockpot
  • Optional: 2 eggs (to prevent stuffing from crumbling)

Instructions:

  • Tear bread into bite-sized pieces
  • Optional: In bowl, beat eggs
  • In bowl, mix beaten eggs (optional), bread pieces, veggies, and seasoning
  • Pour broth onto mixture until bread is moist, but not soggy, and gently toss
  • Place mixture into oven-safe non-stick pan/serving dish and cover
  • Bake in toaster oven at 350° for 20 minutes
  • Uncover and bake for another 5 minutes

Sweet Potato Casserole

What You Need:

  • Hot-plate
  • Pot
  • Steamer basket
  • Bowl
  • Optional: oven-safe nonstick serving dish
  • 3 diced sweet potatoes
  • Diced walnuts
  • Butter/margarine
  • Brown sugar
  • Optional: mini-marshmallows

Instructions:

  • Place diced potatoes in steamer basket
  • Boil in pot on hot-plate for 20 minutes
  • Remove potatoes from pot/basket and place in bowl with cold water
  • Save water in the pot to later steam your veggies
  • Once cool enough to touch, peel potatoes
  • Remove water from bowl and use bowl to mash potatoes
  • Mix in walnuts, butter/margarine, and brown sugar
  • Optional:
    • Place mixture into oven-safe nonstick serving dish
    • Top with marshmallows
    • Place into toaster oven
    • Toast until marshmallows are golden brown

Veggies

What You Need:

  • Hot-plate
  • Pot
  • Steamer basket
  • Vegetables (we recommend green beans)

Instructions:

  • Bring water in pot on hot-plate to a boil
  • Place veggies in steamer basket
  • Steam over pot to preference

Cranberry Sauce

At this point, you’re probably pretty tired from all this cooking, so we recommend the good ol’ fashioned method of getting your cranberry sauce from a can. They come in jellied or whole-berry options.
