8 Easy Trucker Recipes for On-the-Road Cooking

When driving days are particularly long (and most of them are), the last thing many truckers want to do is take the time to attempt a complicated recipe using their cab’s relatively simple cooking amenities. That’s why so many drivers’ dashboards are littered with fast-food wrappers, which is certainly convenient, but not very healthy. In fact, 65% of truckers say it’s hard to eat right1 and 70% of truckers are overweight or obese2. Luckily, there are easy recipes out there that use inexpensive ingredients prepared via simple instructions, which can help truckers lay off the fast-food. Plus, a nice home-cooked meal is a great way to feel at home during long-distance drives.

Below you’ll find some of our favorite recipes for cooking on the road. You’ll obviously need an APU/generator, power inverter, and likely some power-strips with surge protectors to power your amenities. You may not have tons of kitchen tools, but we’ve kept things simple – recipes on the list only require an electric skillet, hot-plate, soup-pot, blender, microwave, and/or slow-cooker. If you don’t have any one of those items, there are plenty of other recipes in the list that are still available. So without further introduction, here are 8 easy recipes for truckers:

Root Beer BBQ Chicken3 (Slow Cooker)

Ingredients: 

  • 2 thawed boneless chicken breasts
  • ½ bottle honey BBQ sauce (approx. 9 oz.)
  • ½ can root beer (approx. 6 oz.)
  • ⅛ tsp salt
  • ⅛ tsp pepper

Instructions: 

  • Cook chicken in covered cooker on high for 3 hours
  • Drain juices from the cooker
  • In a bowl, mix BBQ sauce, root beer, salt, and pepper
  • Pour mixture over chicken
  • Cook, covered, on high for 30 minutes

Ham & Cheese Omelette4, 5 (Electric Skillet)

Ingredients:

  • 2 eggs
  • 2 tbsp milk or water
  • ¼ cup shredded slices of cooked sandwich ham
  • ¼ cup shredded cheddar cheese
  • Pinch salt
  • Pinch pepper

Instructions: 

  • In a mixing bowl, whisk eggs, milk/water, salt, and pepper
  • Spray skillet with non-stick cooking spray and set to medium heat (300 – 325°F)
  • Pour egg mixture into skillet
  • As mixture sets, use spatula to gently push cooked portions toward skillet’s center
  • When mixture is almost fully set – but still looks moist – top half with ham and cheese
  • Slip skillet under untopped side and fold over onto filled half
  • Cook for 1 minute, then slide omelette onto plate and enjoy

Healthy Chicken Salad6

(as opposed to simply mixing together chicken, mayo, and relish)

Ingredients: 

  • 1 large can cooked chicken
  • ½ cup plain Greek yogurt
  • 1 tsp honey
  • ⅛ cup chopped grapes &/or apples
  • ⅛ cup finely chopped celery &/or carrots
  • 1 tsp slivered almonds

Instructions: 

  • Drain water from chicken
  • Mix chicken and yogurt in a mixing bowl
  • Stir in honey
  • Stir in grapes/apples, celery/carrots, and almonds
  • Eat plain, on a wheat-bread sandwich, on a bed of lettuce, or in a wrap

White Bean Soup7 (Hot-Plate, Soup-Pot, Blender)

Ingredients: 

  • 3 15oz cans cannellini beans
  • 2 tbsp olive oil
  • 4 cloves garlic
  • 2 cups vegetable or chicken broth
  • Available seasoning (we recommend ½ tsp rosemary, ¼ tsp thyme, pinch red pepper, pinch black pepper, pinch salt)

Instructions: 

  • Purée 1 can beans in a blender until smooth
  • Drain 2 cans beans of liquid
  • Mince garlic and add to pot with olive oil. Sauté for 1 minute on hot-plate
  • Stir in bean purée, beans, broth, and seasoning
  • Place lid on pot, turn heat to medium-high (350 – 375°F), bringing soup to boil
  • Once boiling, turn heat to medium low (275 – 300°F), remove lid, and simmer for 15 minutes, stirring occasionally, then serve
  • If you want a thicker soup, slightly smash the beans before serving

Ramen Lettuce Wrap8

Ingredients: 

  • 1 package ramen noodles, preferred flavor (we recommend chicken or shrimp)
  • ¼ cup finely chopped carrots, celery, &/or onion
  • 1 head iceberg lettuce
  • 1 bottle sesame ginger dressing
  • Optional: ½ cup cooked chicken or shrimp

Instructions: 

  • Cook ramen noodles according to package instructions
  • Drain excess broth
  • Mix in chopped vegetables and set for 5 min., allowing residual heat to soften veggies
  • To add protein, also mix in cooked chicken or shrimp, depending on ramen flavor (pre-cooked chicken is sold in cans, pre-cooked pre-peeled shrimp is sold frozen)
  • Wrap in leaves of lettuce and garnish with dressing

Mixed Mash9 (Skillet)

Ingredients: 

  • Instant mashed potatoes
  • 1 tbsp butter
  • ¼ cup finely diced onion, celery, &/or carrots
  • ½ cup diced cooked ham &/or turkey
  • ¼ cup shredded cheddar cheese
  • Pinch salt
  • Pinch pepper

Instructions: 

  • Prepare mashed potatoes according to package instructions
  • Set skillet to medium heat (300 – 325°F)
  • Add butter and diced vegetables to skillet and sauté for 3-4 minutes
  • Add ham/turkey and cook for another 2 minutes
  • Add mixture to the mash potatoes
  • Mix in salt, pepper, and cheese

Microwave Meatloaf9 (Microwave)

Ingredients: 

  • ⅓ cup seasoned bread crumbs
  • ¼ cup milk
  • 2 eggs
  • 2 lbs ground beef or turkey
  • 1 small chopped onion
  • ½ tsp salt
  • ½ cup ketchup
  • 1 tsp brown sugar
  • 1 tsp mustard

Instructions: 

  • In a bowl, soak bread crumbs in milk for 5 minutes
  • Mix in eggs, beef/turkey, onion, and salt
  • Place mixture in glass microwave-safe dish
  • Cover dish with microwave safe plastic wrap, leaving one corner open for ventilation
  • Microwave on high for 6 minutes
  • Rotate dish and microwave another 7 minutes
  • Rotate dish again and microwave for 3-5 minutes, until loaf is firm
  • In a bowl, mix ketchup, brown sugar, and mustard
  • Uncover meatloaf, spread on half of mixture, and microwave uncovered for 1 minute
  • Spread on remaining mixture and microwave uncovered for 1 more minute

Peach Salsa Chicken3 (Slow Cooker)

Ingredients: 

  • 2 thawed boneless chicken breasts
  • ½ jar peach preserves (approx. 9 oz.)
  • ½ jar medium chunky salsa (approx. 8 oz.)

Instructions: 

  • Cook chicken in covered cooker on high for 3 hours
  • Drain juices from the cooker
  • In a bowl, mix preserves and salsa
  • Pour mixture over chicken
  • Cook, covered, on high for 30 minutes
